Rotary
Cryogenic Freezing Tunnel For I.Q.F.
|
MODEL
ROTOFREEZE CP 6-100
This system was developed to afford I.Q.F. freezing of
different kinds of food products.
This machine is ideal when wanting to freeze products
without having individual pieces sticking to each other.
It is perfect for products consisting of separate pieces
(granules or crumbs) like risottos, pasta with sauces,
peas, berries, strawberries, sliced or minced mushrooms,
french fries, etc.
THE
ADVANTAGES OF I.Q.F. FREEZING
• High hourly output for a small freezing system.
This advantage is obtained when products do not need packaging
before freezing. This will also free up any space that
would otherwise be needed for freezing an equal quantity
of foodstuffs with other types of systems.
• Large quantities are processed continuously.
Since frozen products are in granules and separate pieces,
they can be appropriately stowed before they are parcelled
out in the various formats for sale.
• Shorter freezing times, compared to conventional
systems.
This is because, during the freezing procedure, the product
is constantly stirred and kept moving. Thus the surface
of the product is constantly exposed to the cold, making
heat exchange with the refrigeration medium easier.
• Optimised formats for sale.
The product can be batched and collected in bags containing
multiple individual-portions, because the products are
in the form of individually frozen granules. So consumers
can take as much product as they need from the package
and avoid any unnecessary waste.

Functional
description of the machine
The machine is suitable for the quick freezing of foodstuffs
(according to the continuous I.Q.F. method). Cold is generated
by cryogen gases.
Products are introduced in a sloping rotary drum, where
the freezing process takes place in a continuous mode. The
rotation of the drum fulfils two purposes:
a) it feeds the product along a slanted
passageway and carries it from the tunnel entrance to the
tunnel exit .
b) it keeps mixing and rolling the product
during the freezing process, so the pieces do not stick
to each other.
The large potential for excursion to the very low temperatures
permitted by the cryogenic gases, combined with the opportunity
to change the speed of feeding the products into the tunnel
allow the user to optimise the different freezing cycles
and to adapt them to the actual needs of each individual
recipe or product composition.
The cooling of the internal drum, which can be set to the
desired temperature, is obtained by spraying the cryogenic
fluid. The freezing temperature range can be varied and
reach temperatures even lower than -90°C.
Spent gas is sucked in by a vacuum system that is fitted
above the in feed area of the tunnel.
The insulation of the drum hollow spaces is obtained with
“CFC Free” polyurethane.
Defrosting and cleaning after each working cycle can be
performed automatically, because the tunnel is equipped
with a self-sufficient washing system.
